Cheesy Chili Mac

Cheesy Chili Mac

1 box macaroni & cheese [plus milk and butter, according to package]
1 Tbsp olive oil
1 lb ground beef
½ green bell pepper, chopped
½ medium onion, chopped
1 cup frozen corn
6 oz tomato paste
½ cup water
16 oz kidney beans, drained
1 Tbsp chili powder
1 tsp cumin
½ tsp cayenne pepper
Salt & ground black pepper, to taste

Cook pasta from macaroni & cheese as directed.
Heat olive oil in a large pot over medium heat. Add onion and green pepper. Cook until soft and caramelized, about 5 minutes.
Add ground beef. Cook until browned.
Stir in the cheese ingredients from the macaroni & cheese [cheese packet, milk, butter].
Stir in the rest of the ingredients. Cover and reduce heat. Simmer 30 minutes.

Goulash - Angie's Way


Goulash

1 Tbsp olive oil
1 lb ground beef
½ green bell pepper, chopped
½ medium onion, chopped
2 cloves garlic, minced
½ cup frozen corn
2 cans tomato soup
1 can chopped tomatoes
1 package elbow macaroni
Salt, to taste
Ground black pepper, to taste

Cook macaroni according to package directions. Drain.
Heat olive oil in large pot. Add onions and green pepper. Cook until caramelized, about 5 minutes.
Add garlic, cook 1 minute.
Add beef and cook until browned.
Stir in tomato soup, tomatoes and corn.
Stir in macaroni, when it is done boiling.
Season to taste with salt and black pepper.
Reduce heat and simmer for 30 minutes.

Puerto Rican Sloppy Joes

Something my husband and I created last night. Basically, it's Picadillo on a hamburger bun, with a few changes in ingredients.

Puerto Rican Sloppy Joes

1 Tbsp olive oil
1 medium onion, diced
1 garlic clove, minced
½ green bell pepper, diced
1 lb ground beef
¾ cup ketchup
¼ cup water
¼ cup green olives, diced
2 Tbsp Worcestershire sauce
2 Tbsp white vinegar
Salt, to taste
Ground black pepper, to taste
  
Heat olive oil in a large skillet over medium heat. 
Add onions and green pepper. Cook until caramelized, about 5 minutes. Add garlic, cook 1 minute.
Add beef and cook, breaking into small pieces until browned.
Whisk together ketchup and water. Add to skillet and mix well. 
Add the rest of the ingredients and reduce heat to simmer. Simmer 15 minutes.
Serve on hamburger buns.

I Felt Creative

I haven't written in here for freakin' ever and I still don't really plan to keep up with it, but I actually felt creative last night [which I haven't for a long time] so I figured I would put it up.

Ingredients:
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1/2 Green Bell Pepper [chopped]
  • 1/2 Onion [chopped]
  • 3 Celery Stalks [diced]
  • 1 lb ground beef
  • 2 Packaged Oriental Flavored Ramen
  • 2/3 Cup Soy Sauce
  • 2 Cups Water
  • 1 Can Bean Sprouts
  • 2 Tablespoons Corn Starch
  • Salt & ground black pepper
Directions:

  1. Heat oil in a saute pan over medium heat. Add green pepper, onion, and celery and cook until soft. Add the ground beef and cook until browned. Season with salt and pepper. 
  2. Add the ramen flavor packets, water, and soy sauce. Bring to a boil. 
  3. Add ramen noodles. Cover and cook 3 minutes.
  4. Add corn starch and stir until sauce thickens. 
  5. Remove from heat and stir in bean sprouts.
  6. Serve immediately.
I didn't really pay attention, but I think it serves 6ish.
