Goulash
1 Tbsp olive oil
1 lb ground beef
½ green bell pepper, chopped
½ medium onion, chopped
2 cloves garlic, minced
½ cup frozen corn
2 cans tomato soup
1 can chopped tomatoes
1 package elbow macaroni
Salt, to taste
Ground black pepper, to taste
✩ Cook macaroni according to package directions. Drain.
✩ Heat olive oil in large pot. Add onions and green pepper. Cook until caramelized, about 5 minutes.
✩ Add garlic, cook 1 minute.
✩ Add beef and cook until browned.
✩ Stir in tomato soup, tomatoes and corn.
✩ Stir in macaroni, when it is done boiling.
✩ Season to taste with salt and black pepper.
✩ Reduce heat and simmer for 30 minutes.
